Recipe: Peanut Butter Oatmeal Raisin Cookies


The name is a mouthful but trust me you will have a mouthful of these cookies once you try them out. What I especially like about these cookies is that they taste healthy and therefore I don't feel like such a gluten after I've had 12 of them in one sitting (do not try that at home).



Yields: 24 cookies

Ingredients
2 cups of oatmeal
2 cups of flour
1 cup of raisins
1/2 cup of ground flax seeds
1/2 cup of sugar
1/2 cup of honey
1/4 cup of canola oil
1 stick of butter
3 dollops of peanut butter
1 tsp salt
1 tsp cinnamon
1 tsp vanilla


  1. Preheat oven to 350 degrees.
  2. Mix flour, slat, flax seeds, cinnamon, and salt. Melt butter, mix with sugar, and add to mixture of dry ingredients.
  3. Whisk in honey, eggs, canola oil and vanilla.
  4. Mix in raisins.
  5. For the next step I definitely recommend using a stand or electric hand mixer... if not you may have better luck using your hands. Slowly add the oatmeal and peanut butter to the mix. Do half a cup of oatmeal followed by a dollop of peanut butter, mix, and repeat til you are out of ingredients. Trust me... it gets super thick!
  6. Use cooking spray to grease baking sheet and add spoonfuls of mix 1/2 an inch apart. These cookies hardly rise. 
  7. Bake for 17-20 minutes.
